15 Min Meal - Frittata


3-4 eggs beaten

Any selection of 2-3 vegetables (e.g. sweet potato, broccoli,peppers,onions,mushrooms,etc)

Lean meat, tuna or prawns (optional)

Use a non-stick frying pan and heat up a little olive/coconut/rapeseed oil, cook meat/prawns, add veg and cook for 2-3 mins, add beaten eggs, Cook for 5 mins then to cook the top of the frittata heat under a medium grill until golden brown. Eat with a fresh green salad.
